In honor of National Scotch Day on July 27, brew this drink that proves Scotch whiskey isn’t just for sipping straight.

The whiskey cocktail is the point of origin of modern drinks. Its formula – spirit, sugar, water and bitter – is the skeleton of a cocktail, the bones on which to hang pretty curved variations.

Nuevo Viejo, from Prizefighter, one of my favorite bars in California, combines the peaty musculature of scotch with the supple sweetness of Grade B maple syrup. It’s windblown and easy going, exactly the qualities that I like in a whiskey cocktail. Cheers.

Prizefighter Nuevo Viejo Cocktail

Makes 1 drink

  • 2 ounces of mixed Scotch whiskey
  • 1/4 ounce of pure maple syrup (preferably grade B)
  • 2 dashes of angostura bitter
  • Orange zest, for garnish

1. Place an Old Fashioned glass in the freezer until cold, at least 5 minutes.

2. Combine the scotch, maple syrup and bitters in a shaker and fill it halfway with ice cubes. Stir until the outside of the shaker is frosted. Filter the drink into the chilled Old Fashioned glass. Rub the orange zest around the rim of the glass, then drop it.
