Whiskey fans will soon have a new lounge in Portland, OR’s Pearl District

PORTLAND, Ore. (KOIN) — Collin Nicholas already owns a popular cocktail bar in northwest Portland — but wants to give whiskey lovers something to talk about.

Nicolas, the owner of pink bunny, plans to open a new whiskey bar called Fools and Horses in the Pearl District. It will be located on Northwest 12th Avenue in the space previously used by the Vault, which is now closed.

As the city reopens after the coronavirus pandemic, he saw an opportunity to fill a void in the neighborhood with a “well-executed food and drink concept.”

Folks can expect a nod to the prohibition era of the late 19th century and early 20th century with whiskeys from around the world in signature cocktails and tasting flights. As for the food, Nicholas said his Hawaiian-born chef would draw inspiration from his Hawaiian Paniolo cowboy culture when creating the menu.

“This business takes a lot of sophistication and attention to detail, including hard work,” Nicholas said. “Although it takes a lot of effort and hard work, it is a work of passion.”

Nicolas added that he was confident in the new business after taking over Pink Rabbit, located at 232 NW 12th Ave., in March 2021. The entrepreneur worked as a dishwasher and cook before moving into high-level management – with 12 years of consulting experience.

As for the new salon, Nicolas does not anticipate labor shortage issues with 12-15 employees expected to join the team, but the supply chain is another story.

“People see it everywhere buying products, some spirits,” he noted.

Nicolas said he was planning Fools and Horses to open in early July to give people “accessibility and the ability to taste it through some of these whiskeys that ultimately may never be on the Oregon market”.
